it's about time i talked some more about food. :)
the last time we were in california, just about a year ago, we visited our friends who made us a delicious meal. it was a thai style noodle and veggies concoction. this dish was inspired by that one. it's super easy and fast and so delicious, and my kids love it, which is always a plus (but then again they love everything).
i call this one "Thai Style Brothy Noodles with Shrimp".
ingredients:
* udon noodles like these (yes that's a 5 lb bag of dried noodles...we eat a LOT of noodles!):

* veggies of your choice, cut into nice bite-sized pieces (i usually use onions sliced thin, carrots sliced thin, mushrooms sliced, and broccoli)
* shrimp (or whatever meat/seafood you feel like)
* some sliced garlic to your taste (we love garlic so i'll use 4-6 cloves)
* 1-2 tsp red thai curry
* 1 quart vegetable broth
* 1 can coconut milk
* a few dashes of fish sauce
directions:
* bring a medium to large pot of water to a boil and cook noodles per directions on package.
* while that's going on, heat a large pan or pot over medium heat and add some oil. add onions and cook a few minutes. add the carrots and mushrooms and garlic and cook a few minutes more. add the broccoli and cook a couple minutes more. add the curry paste and then the broth and bring to a simmer. simmer for just a few minutes, the veggies cook FAST. add the coconut oil and make sure not to over-boil. add the shrimp and cook a couple minutes til they're done (turn opaque and pink). turn off heat and add several dashes of fish sauce.
*drain noodles when they're done cooking, and put one portion size in each big bowl. ladle some of the brothy goodness into the bowls and serve! voila!
i decided to write this one down as an afterthought, and everyone was starving and anxious to eat, so i didn't really get a chance to make my picture pretty. but here's what it looks like, cuz if you're like me and like cookbooks with lots of pictures, well, then maybe this will be incentive to try this one out. :)

and this next one i found on one of my favorite food blogs. i have to say, this was one of the best waffle recipes i've tried. we have a belgian waffle iron, and most recipes that don't have yeast tend to come out dense and heavy. but not this one! it's super light and fluffy, crunchy on the outside while tender on the inside...delicious!!! of course the kids loved it and begged for more. i think they each ate almost an entire waffle, on top of the eggs, potatoes and tempeh bacon they also had. in case you're wondering how i made the potatoes, this is my favorite home-style fries that i just kinda throw together. basically i just chop up some potatoes kinda small, no bigger than 1/2" cube, throw them in a big ziploc bag, pour in a generous (but not ridiculous) amount of high heat cooking oil (safflower or canola, don't use low heat oils like olive oil), add salt, pepper, garlic powder, onion powder and smoked paprika, mix it like crazy (my kids love to help with this part). bake for 30 minutes on 425'F, stir midway. these are good in breakfast burritos too. YUM. this picture of the waffles was, again, a total after thought, and i had already started eating it when i decided to blog about it. i didn't have any salsa, but it was plenty good without. oh, and here's the recipe!!
