SUSHI BAKE!!!

several of my friends have posted about this so called sushi bake, and i've always wanted to try it, but we're not a fan of imitation crab meat (FYI, in case you didn't know, it's not made of crab, it's made of some hodge podge of fishes, and we're not talking high quality stuff). then i thought, what if i made it with salmon instead?! OMG...brilliant!!! this was soooo good, a HUGE hit with W and R (he kept asking for more, i was afraid i wouldn't have any left for ME to eat!).

so here's what i did. i broiled some fresh coho salmon from whole foods. i then sort of mashed it and mixed in about half a cup of mayo and skipped the sour cream. i layered the rice in my baking dish, then spread the salmon. i drizzled some teriyaki sauce, sprinkled some furikake (the one i have is a mix of dehydrated veggies and sesame seeds with the seaweed), and baked it according to the directions. i served it with thinly sliced avocado and some korean style miso soup, and man, it was deeeeelicious!! this will definitely be on the menu again soon! especially when salmon goes on sale at whole foods! :) i think next time i'm gonna put a thin layer of panko breadcrumbs. YUM!!!
