Ramen From Scratch
i found this veggie ramen recipe online a while ago, but thought it was kinda bland, so i decided to make up my own. and quite frankly, it's pretty darn good. :)
(makes 4 generous servings)
8 cups water
2 pieces of kombu sea vegetable
8 dried shiitake mushrooms
*bring to a boil in a large pot and simmer on medium low for about 20 minutes. add about 3 tablespoons of miso paste and as much soy sauce to suit your taste. remove kombu (you can slice it and add it back, or throw it away. i add other sea vegetables so i throw it out), and shiitake (slice these up and return to pot)
mung bean sprouts
sliced carrots
snow peas
sea vegetable (soaked for 15-20 minutes)
green onion, sliced
and any other veggies you like, as well as tofu
*add veggies and simmer til they're soft, but not mushy. prepare ramen noodles (i try to use fresh noodles, but if you can't find them, just go for the packaged stuff and throw out the MSG-filled, over-salted soup base). add a hard boil egg if you please. serve and enjoy! oh, and it's even better with a side of kimchi!!!
