happy new year! okay, so i'm a little late...haha, but i've been relaxing after a hectic holiday!!
so on one of the mommy forums i frequent, one of the posters started a knitting thread, and it really inspired me to pick up my knitting needles again (it's been a loooong time, the last thing i knitted was a hat for R before he was born 16 months ago, and i still have to block and sew buttons on the sweater i managed to finish before that). i really started to miss knitting, so i decided i would make the sweater she was making! i can't wait to get my yarn from knitpicks so i can start my february lady sweater!!! the creator got the inspiration for this sweater from this adorable baby sweater that i would love to make, but probably won't, cuz it would require me to go out and buy another knitting book (hmm...maybe i'll check the library first!). anyway, i'm hoping i can finish this soon enough to wear this winter/spring!! i'm crazy excited to start knitting again! hurry up and get here, darn yarn!!!
okay let's talk about food. i was at whole foods a few weeks ago, doing my weekly grocery shopping, and saw this really cool magazine (a special issue) from vegetarian times. it had GREAT recipes, and i wanted it!! then i looked at the price, it was $8!!! yikes!! well, i hung onto it, waiting to see how much i would be spending on groceries, and decided at the end to go ahead and buy it. the first recipe i made from it was the deep dish skillet pizza. i love making pizza from scratch, and having a kitchenaid stand mixer with a dough hook really helps!! this would be my first attempt at a skillet pizza tho (made in a cast iron skillet, which we just got a couple months ago, and baked in the oven). omg, it was seriously the best pizza EVER. you saute kale, mushrooms, and garlic, add some neufchatel cheese at the end, poor into your crust, sprinkle with feta cheese, chopped fresh oregano and tomatoes, and bake to perfection!!! the kale gave it such a nice flavor and the feta and neufchatel gave it just the right amount of cheese (altho i used half the feta the recipe called for). and even tho i was completely stuffed, i wanted more more more!! so did W!! R wasn't that excited about it, but i think that was cuz he was too preoccupied with his peas, which are one of his favorites. i will definitely be making this one again very soon!!! i would post a picture but my photo hosting site is being weird and i can't seem to get the photo uploaded correctly! grr!!! anyway, you'll just have to take my word for it that it was a deeelicious pizza! ;)
